Wildflower - Zibeerbo 2025 750ml

"Zibeerbo is a golden barrel aged ale wholly fermented by a diversity of yeasts and bacteria collected from native flowers in NSW made with Zibibbo grape skins. This 2025 edition was made with a pressload of freshly squeezed skins from our friends at Brash Higgins in the McLaren Vale, SA which was sent cold to Sydney and macerated with beer. After a four month maceration of skins and aged ale it was bottled and allowed to naturally carbonate and mature before release.

Tasting notes by Meesh: On the nose, there is sweet pear, delicate honeysuckle florals and a hint of ginger. The palate starts round and full, with a delightful fruit weight, generous stonefruit and mandarin peel citrus character. To follow, a cleansing acid line and then a real vinous grip to the finish.
