Since its establishment in 1984, Castello Romitorio has released only a handful of vintages of this wine. The 2016 is the tenth Riserva ever produced by Castello Romitorio. A rigorous selection of grapes is made from the estate’s eldest vineyards located in the northern zone of Montalcino. Each vineyard block is monitored throughout the vegetative process, blocks are chosen and each cluster is carefully tended in order to ensure that the fruit reaches a consistent and optimal ripeness. The Sangiovese clusters are then harvested meticulously by hand, with hand sorting both before and after destemming. Fermentation takes place in stainless steel tanks with an initial short period of cold maceration (below 20°C) on the skins for about 15-20 hours. This is followed by up to 24 days of maceration at a higher controlled temperature. Malolactic fermentation that is naturally caused then lasts for about 10 days, before the wine is rested to separate the lees. These are the secrets of Solaia together with the finest Cabernet Sauvignon, Cabernet Franc and Sangiovese grapes from its namesake vineyard. Solaia is a 50 acre (20 hectare) vineyard with a southwestern exposure located at an altitude between 1150 and 1325 feet (350-400 meters) above sea level and with a stony soil of “alberese” (hard limestone) and “galestro” (flaky calcareous clay) rock. The vineyard is located at the Tignanello estate. The Antinori family produced this wine for the first time in the year 1978, and the initial blend was 80% Cabernet Sauvignon, and 20% Cabernet Franc, a formula repeated in 1979 as well. In the following years, 20% of Sangiovese was introduced and certain adjustments were also made in the rapport between Cabernet Sauvignon and Cabernet Franc until the current blend was settled upon. Solaia is produced only in exceptional vintage, and was not produced in 1980, 1981, 1983, 1984, and 1992. The 2017 growing season will be remembered for its highly unusual weather conditions. Higher temperature than the average registered in March and April followed by a fairly rainy May. From the first week of June the temperatures started to rise again until the month of August with occasional, scattered thunderstorms. The 2015 vintage winter period has been rather dry with average seasonal temperatures, same characteristics held during March and April, where the germination of Sangiovese started. The vegetative stage developed regularly in the following months, taking advantage of the plentiful water reserves carried over from 2014. Summer season progressed with a dry, sunny climate. In the first week of August two significant rainfalls brought much needed respite to the plants, lowering temperatures and allowing the grapes to photosynthesis in optimal conditions that supported diurnal temperature variation, and optimal condition for aromas concentration. The season progressed with a quite hot and dry summer with a significant diurnal temperature variation from the month of August. Sangiovese, a late ripening grape, benefited from the rainfalls of mid-September, from the following good weather conditions and the diurnal temperature variation.
