Van Dieman - Elderflower Spontaneous Ale 375ml
"A Lambic-inspired fruit beer, consisting of young spontaneous ale aged in oak barrels, brewed with, and aged on fresh Elderflower flowers.
Brewed in early December 2019, inoculation into coolship included fresh Elderflower flowers and bees wax (and some residual honey) on a particularly favorable inoculation night (3.9c temp and gentle WNW winds), this appears to have incentivised the fermentation resulting in a rapid (for spontaneous beer) development of flavors and reaching terminal gravity within 3 months. All through its time in barrel, the Elderflower fragrance remained bold & characteristic, but completely in check with the dry astringent body of the underlying beer. The distinctively Elderflower perfume now rises from the glass before a lime sherbet flavour refreshingly strikes the palate. Only just approaching 12 months of age, its fresh, vibrant and effervescent.
Elderflower is brewed with estate grown, house-malted Pilsner malt, estate raw barley, estate raw wheat, and estate aged hops. The beer is cooled overnight using outside air temperature in a traditional, large shallow vessel known as a coolship. During the cooling process, naturally occurring microflora from the air inoculates the beer, and in the morning, it is transferred into oak barrels where the entire fermentation and aging takes place.
