Winemaking
Barrel selected from the most outstanding parcels from the 2019 vintage to create a uniquely Australian blend with a snapshot of a vintage in time. The Cabernet was destemmed only while the Shiraz saw 25% whole bunches added with the balance destemmed. Both parcels were cold soaked before fermentation and allowed to warm naturally before undergoing fermentation for two weeks in traditional open fermenters. The parcels were matured in a combination of new and seasoned French Oak for 18 months.
