"Australis is the next step from our Dark Emu – a dark ale aged in oak and brewed with native grains. It’s been lifted with Chinotto syrup made by the Bertoncello Bros from O.MY Restaurant using Mountain Yuzu fruit, farm honey, and native aromatics like strawberry gum, lemon myrtle, and river mint. The result is a dark beer with layers of citrus, gentle bitterness, and an oaky backbone. Earthy, spiced, and quietly complex.

Native grains: mamadyang ngalluk + burru ngalluk grass seeds harvested by Yuin people along the Wallagaraugh River.

Chinotto syrup: cooked, steeped, and built for flavour over a month.
