Plantagenet - Wyjup Cabernet Sauvignon 2021 750ml
"Fruit was destemmed and cold soaked for 7 days before a controlled ferment using rack and return and pump-over management. A small portion underwent post-ferment extended maceration to optimise tannin extraction. The wine was pressed and matured for 18 months in a combination of French oak barriques: 40% new (Mercurey, Aquitaine, Boswell) and the remainder 1 and 2 year old. Each cooper and toast level was selected to frame the purity of fruit without overwhelming the aromatics.
Appearance: Deep crimson-purple.
Aroma: The bouquet is lifted with notes of ripe cassis, bay leaf, cedar and dark chocolate. Subtle cigar box and graphite add complexity.
Palate: The palate is medium-bodied but powerful, with tightly woven cocoa-powder tannins and a thread of savoury oak. Long and precise, with a red-fruited core and secondary spice just beginning to emerge." - Plantagenet
