And we know they're the finest in the world because DJ took it upon himself to sample everything Caju and the team at Stella Maris could offer and now they have a beer tab that may last a lifetime as we try to settle DJ’s oyster debts.

Oysters have been used in beer for centuries and provide a complex, semi-sweet minerality and creaminess to the body thanks to the high calcium carbonate levels in the shells. We threw the whole oyster in - shell and all - and used a dozen oysters per 30 litres of brew. Expect a silky smooth stout with notes of chocolate and coffee, plus a kick of minerality." - Mountain Culture
