"Blanc d’Eulalie is made from our finest Chardonnay grapes from the lieu-dit “L’Epicéa”, the sunniest plot on our estate, planted over 50 years ago. Approximately 40% of the wines underwent fermentation and aging in Burgundian demi-muids and are offered with a very low dosage to preserve their full essence.

Appearance: This Champagne boasts a luminous, lemon-yellow color. It is enlivened by fine bubbles that feed a persistent mousse. The visual impression suggests a fresh and nuanced wine.

Nose: The nose evokes aromas of smoky, iodine-rich limestone, typical of our subsoil, mingled with notes of lemon and white peach. Aeration of the Champagne reveals notes of cashew nut compote, butter, and almond, with hints of anise.

Palate: The initial contact on the palate is supple and fresh with a creamy effervescence. The Champagne develops a luscious, fruity character, which lends volume, iodine salinity, and length to the palate.
