Yes, “The Future” is finally here! Sure, it looks very much like “A Cleansing Ale” used to. And that’s the whole point!</em></p> <p><em>This has all been made possible by the slow, experimental learnings of a dedicated 18-year journey of exploration culminating, over the course of the last 4 pandemic-corrupted-years, when on each occasion we brewed a batch of ‘A Cleansing Ale’, we separated a volume of the base wort and allowed it to spontaneously wild ferment. The oak barrels accumulated in our cellar, growing numerically such that they began to populate all available floorspace &amp; sheds, eventually, and recently, spilling into the rows between our hop bines. In August 2022 we siphoned an aliquot from each barrel, blending the pieces of this time-puzzle onto hop flowers in a tank and then, in September, we bottled it.</em></p> <p><em>Not only spontaneously fermented, but spontaneously bottle conditioned! Be in no doubt about this whatsoever, this is magic! For the collab, we used Grüner Veltliner - an Austrian native grape making its impact felt here in Australia. This is certainly the case with Grüner Folie!</em></p> <p><em>In 2024, Mitch from Eleven Sons Wine brought us some spent Grüner Veltliner skins. The skins were still nice and juicy, contributing a sugar source and plenty of grape character. Their months out in the vineyard also meant these grapes offered a home to wild yeast and bacteria. We open-fermented the skins on a simple wild ale base - allowing spontaneous fermentation from grapes' wild yeast and bacteria to do its work, along with the influence of our brewery's own airborne microbes. After 9 months in barrel and one final fermentation in bottle for natural carbonation and further development, the results speak for themselves.</em></p> <p><em>The aptly named Grüner shows fantastic green character - a bright, fresh and highly accessible wine hybrid. Expect green fruit characters of lime, honeydew and under-ripe apricot. A balanced and refreshing acidity with a long, slightly saline finish. It is named for Topher and Bernadette’s first son. Saint Walter was an 11th century monk from the Loire Valley in France and is the patron saint of vintners.</em></p> <p><em>In 2024, St Walter: Gamay was made by blending barrel aged golden mixed culture fermentation ale with 515kg of handpicked, whole bunch Gamay from Johansen Vineyard in Tumbarumba, NSW. After a four month maceration and refermentation of fruit and beer, it was bottled and allowed to naturally carbonate and mature before release.</em></p> <p><em>Tasting notes by Meesh: Look I know I say this every time, but what a colour! There is just so much fruit character bursting out of the glass...a beautiful expression of the lovely fruit from Johansen. Some light floral notes followed by red berries, and almost into black forest territory. There's an element of rich funk and vinous character giving it depth too. The oldest portion of lambic was brewed on the 28th of November 2014. While blending, we added spring honey from our own bee(hive)s.</em></p> <p><em>3 Fonteinen Oude Geuze Cuvée Armand &amp; Gaston is a blend of one-, two-, and three-year old traditional lambics, all brewed at Brouwerij 3 Fonteinen. Quince started as a Lagerbier, similar to the base of Sunsets, which we then finished in oak with our Side Project mixed culture. Once mature, we allowed it to re-ferment on Illinois-grown Quince (sourced by LC member Will Bresnahan!) from the 2020 and 2021 harvests. Light levels of hopping balance with the toasty characters in an extended cooler fermentation with our house mixed culture of foraged wild yeast, naturally occurring souring bacteria and brewers yeast. Following fermentation, we rack Amber into French oak barrels to further develop a smooth palate and express funky, tart characteristics from our indigenous yeast. We select and blend well evolved barrels for a beer with a desired malt forward with a matched acidic character.
