"A blend of two of the most delicate yet brilliantly aromatic varieties, which produces a fine effect in the glass. A nose of cut grass and fig leads to a balanced, middle weight palate and finishes with a crisp, fresh, lime/lemon persistence. 

‘Forget-me-not’ is a classic Bordeaux white wine. The blend of Semillon and Sauvignon Blanc combines fruit, liveliness and aromatic richness. There’s literally nothing not to like. Vintage 2025 is made up with Joch’s favourite variety, Semillon predominant (70%) and the balance (30%) is Sauvignon Blanc. Semillon adds palate weight and texture, as well as citrus (lemon) notes. Our SB is grassy with a hint of nettles. The net result is a delicious, crisp blend that is perfect as an aperitif or can be enjoyed with seafood (oysters?) or a chicken stir-fry." - Spring Seed Wine Co.
