"Every year we trial a number of different varieties to see how they show in the wonderful Barossa climate. These small parcels are usually blended away until we tasted the olf and rare French variety Counoise with the historical Spanish variety of Carignan from a single vineyard. We picked these two varieties together as a field blend and co-germented in an open fermenter.
