Style: Barrel Aged Imperial Stout
ABV: 15.0%

Two years ago, we set out to recreate Derivation Blend #3, but with twists from what we have learned over the years (we rarely leave any recipe alone and always make tweaks). We threw the Derivation Blend #3 recipe (however without its touch of rye malt this time) and the OWK recipe (no vanilla beans) into Willett Rye and Still630 Rye barrels for 2 years before blending. The result is exactly what we had set out to produce and we are honored it is worthy of the Beer : Barrel : Time name.

We are excited that we could blend up this beer for you - to express our barrel-aging program from a slightly different angle and to offer up BBT more than once this year! BBT Rye will not be a yearly thing, this first batch was technically an experiment, so we do not have enough barrels filled to do this again next year, but we have started filling some extra rye barrels here and there, so hopefully we can see it again in 2022.

Single Farm Motueka

Style: Blended Farmhouse Pale Ale
ABV: 6.0%

Single Farm is our blended Missouri Farmhouse Pale Ale in which we explore the complexities and beautiful expressions of hops and our native mixed culture. For this second expression, we chose to express the Motueka hop from Freestyle Farms by dry hopping this light, billowy beer and then bottle conditioning to a lively level of carbonation.

Quince Wild Ale

Style: Wild Ale with Quince
ABV: 5.0%

As with Satsuma and Yuzu, we used a very delicate base to allow this extremely aromatic fruit to shine. Quince started as a Lagerbier, similar to the base of Sunsets, which we then finished in oak with our Side Project mixed culture. Once mature, we allowed it to re-ferment on Illinois-grown Quince (sourced by LC member Will Bresnahan!) from the 2020 and 2021 harvests. This beer started life in 2020 and then became a blend of both harvests providing the depth and complexity only found with time from the older thread and then the explosive green apple jolly rancher and vibrant aromatics from the youthful fruit expression of the younger thread.
