The barrel stock we tasted through to choose the 2019 BBT blend is the exact same stock that we pull from for the Derivations and all of our stouts. We have brewed 15 different stout recipes, aged them in a variety of barrels, and then always thoughtfully selected and blended to achieve our goals, whether it be Beer : Barrel : Time, a new blend of Derivation or the Barrel-Aged Stouts by Shared Brewing.
BBT 2019 consists of:
• O.W.K. recipe aged in Willett Bourbon barrels for 21 months
• O.W.K. recipe aged in Eagle Rare barrels for 21 months
• Derivation Blend #3 recipe aged in Knob Creek barrels for 22 months
• Derivation Blend #3 recipe aged in Knob Creek barrels for 28 months
• Derivation Blend #2 recipe aged in Willett Bourbon barrels for 20 months

Style: Barrel Aged Farmhouse Ale

For the first time since Blend #1, I incorporated a dash of Oude du Blé into this Vintage. While blending Vintage 2019 last year, we revisited all of previous blends and Blend #1 always had, and still has, this slight sense of air, fluff, and delicacy which had gracefully aged and developed. Even with the careful selection of our best barrels over the years, Blend #1 always held its own special place when enjoyed at the same time as the others during a vertical tasting. Being that the grass is always greener, and since these subtleties hadn't been explored in a blend since the first, I wanted to take the steps to save Oude du Blé barrels which could be explored in early 2022 for this Vintage 2020 version of Tête de Cuvée.
This select blend is as follows:
• Oude de Blé - 500L Puncheon Fermented
• Oude Fermier - 225L Chardonnay Barrel Fermented
• Experimental Saison #1 - 500L Puncheon Fermented with new Saison Yeast Strain + Side Project Cultures
• Experimental Saison #2 - 500L Puncheon Fermented with new Saison Yeast Strain + 2 Brett Strains
• Experimental Saisons #3 - 500L Puncheon Fermented with new Saison Yeast Strain + SDB Foedre Cultures

Le Saisonnier Dry Hopped
Style: Foedre Aged Farmhouse Saison
ABV: 4.0%
Dry-hopped Le Saisonnier was hopped with New Zealand Rakau and is named after the seasonal workers for which the first, old-world Saisons were originally made. We brewed this table beer with European malts and aged it in a Missouri Oak Foedre for 6 months with a blend of Missouri microflora to create a delicate, yet expressive experience from this naturally conditioned beer.
