One Drop - LoDo Pilsener

"After laying cold and dark since the Autumnal Equinox, a bright lager emerges for solstice; longer days are coming. Brewed according to a Low Dissolved Oxygen methodology - LoDo - we’ve meticulously tried to limit any oxygen ingress from the point the malt was milled up all the way up until this was packaged into cans. LoDo brewing has gained popularity in recent years and is found to enhance flavour stability, retain nuanced malt and hop character that is usually lost, and provide a ‘brightness” to lighter beers. We’ve brewed ours using under-modified traditional German Malz, a very lengthy and cold fermentation, 3+ months cold conditioning, and a natural carbonation.
