Nomads Garden - Skin Contact Field Blend White 750ml
"Handmade – Unfiltered – Natural wild yeast ferment – Pinot Blanc (60%), Savagnin (30%), Pinot Gris (10%) co-fermented – 73 days on skins
This is our third release of the Skin Contact White Field Blend, sourced again from the Acacia Park vineyard. We co-fermented three varietals, comprising 60% Pinot Blanc, 30% Savagnin and 10% Pinot Gris. Pleasingly, they all reach ripeness at a similar time and so work well together as a true field blend; picked on the same day and fermented as one. Pinot Blanc brings clean aromatics, Savagnin delivers acidity and mid palate weight, while Pinot Gris contributes overt aromatics and a slightly pink hue to the wine.
In contrast to 2021, we made the decision with this vintage to limit exposure to oxygen. We found that although the oxidation gave the wine an appealing orange colour, which most people associate with skin contact, it also muted many of the beautiful nuanced aromas of the wine.
In the winery the grapes were destemmed and crushed before being sent to two stainless steel fermenters. They were covered with a protective layer of CO2 until wild fermentation began on day four. The ferments were kept cool and pumped over once every couple of days.
With fermentation completed, the tanks were topped, and the wine remained unsulphured and on skins for 73 days. The juice was then pumped away and the skins were drained for a couple of hours but not pressed. A small addition of 30ppm SO2 was also added prior to bottling to preserve the vibrancy of the wine in bottle. Don’t be fooled by its colour; despite not glowing orange as last year’s did, we believe our 2022 Field Blend is packing way more flavour, vitality and texture." -Nomads Garden
