"Juicy & Complex, with a red fruit profile of sour cherry & pomegranate, kirsch, rhubarb, alpine herbs, red currant and baking spice.
Destemmed fruit is transferred to open fermenters, with some foot trodding to loosen up some juice for wild fermentation. The ferment is punched down by hand, once in the morning, and once at night. After 16 days the must was basket pressed to 300L seasoned hogshead barrels for 7 months of maturation, before being married into tank. Bottled, sealed, and labelled on site. Minimal sulphur was added at bottling." -Muto
