"Sang de Pigeon (Pigeon's Blood) is a nod to my former life as a jewellery valuer. It's the trade term for the colour of the finest rubies, invariably from the Mogok Stone tract in Myanmar. The fruit for this pale-coloured Chardonnay was grown far to the south-east, in South Australia's Adelaide Hills.
For wine nerds like me: low winter rainfall with blustery weather during flowering resulted in a very small crop. Hand-picked on the 10th and 21st of March from Ben's Block in Lenswood and the garden vineyard in Piccadilly. Wild yeast barrel-fermented with 32% maloloactic, matured for 11 months on yeast lees in French Oak (49% new), filtered and bottled." - Michael Hall
