"Brewed and aged across a matter of years, each barrel that contributed to this Assemblage was unique in its own right. The youngest barrel at 12 months and the oldest at five years, these barrels express a high degree of flavour development.

We taste the barrels periodically, letting them dictate when they're ready. The day we formed Assemblage, we tasted a plethora of barrels from our barrel stocks. Blending them together allowed for a showcase of the complexity and breadth of our collection.

On opening this little funky number, you are greeted with a strong peach and stone fruit character that delves deep into our unique barrel character. In classic La Sirène style, it finishes dry, refreshing and with an abundance of sourness and character." - La Sirene
