Its warm days and cool marine layer-fed evenings allow for a cornucopia of fruits and vegetables to be grown in its rich soil. One of Santa Maria’s crown jewels is locally grown raspberries. We jumped at the opportunity to ferment fresh local raspberries with one of our Barrelworks creations. Behold Bretta Rosé! A low-alcohol Berliner Weisse style ale, acidified and matured in French oak puncheons for 6 months, is the foundation for this gem. Add 1000 lbs. of fresh raspberries, allow a secondary wild fermentation for 4 more months and voila (!), we have a crisp effervescent concoction, bursting with raspberry perfume and flavor, a rosé color, bracing acidity, and a clean and refreshing finish.' - FW x2 'Feral Vinifera 2017' Wild Ale with White Wine Grapes (9.5%) 375ml 'A flavorful wild ale fermented in Andrew Murray barrels shows lots of fruity notes - apricot, guava, vanilla, Meyer lemon.' - FW x1 'Lil Opal 2016' Wild Saison (6.1%) 375ml 'Lil Opal is the beer that launched our wild beer program when the barrels were stashed in out-of-the-way places and could be counted on two hands. The beer married oak and wild microflora, creating a beer that eventually gave birth to Barrelworks. Today the barrels number in the thousands, all of various origin and size, nurturing several different beers and wild microflora from our program. Lil Opal is a brett'd saison released in the spring to celebrate the vernal season. Aged over one year in French and American oak, Lil Opal's maturation time expresses the beer's oak signature, refines the spicy, fruity and earthy yeast notes, and refreshes the palate with a soft light acidity. A santé!' - FW x1 'Violet Underground 2019' Collab with Wild Beer Co. - Raspberry Wild Saison (5.6%) 375ml 'In 2019, The Wild Beer Co, and Firestone Walker Barrelworks once again pull two continents together or the uniquely imaginative Violet Underground Cross-Atlantic Wild Ale. To create this cuvee, we tapped into native Somerset Wild, a proprietary wild yeast used solely by Wild Beer Co. at their facility in England. Sunrise Raspberries and a youthful batch of Bretta Weisse were aged in French Oak Foeders. This aromatic concoction was then blended with a mystical fermentation of French candied violet petals and Somerset Wild Saison. The resulting potion is bursting with aromas of ripe fresh fruit and hints of botanical spice.
