"The Manzanilla En Rama “I think” is, besides being a humble tribute to Charles Darwin as a symbol of the triumph of rationality, an authentic and untamed manzanilla. Bottled with only the lightest filtration, it maintains the same intense golden color and sharp character it exhibits in the casks where it has aged under a veil of flor for a period of approximately four and a half years.
The proposal to select a purebred Manzanilla from Sanlúcar, younger and with a less extreme profile than the various editions of the "La Bota de…" series, but still bottled preserving the wine's authenticity as found in the casks—with all its color, substance, and full aromatic character—came to Equipo Navazos through Paul Shinnie and RHONE TO RIOJA. They decided to launch the project, certain that the time has come to extend the appreciation of true Manzanilla in all its purity to a wider audience in the United Kingdom, beyond the limited number of connoisseurs who typically have access to our La Bota de Manzanilla, due to its limited availability. Equipo Navazos embraces this challenge with the enthusiasm of contributing to the growing awareness—and therefore, necessarily greater admiration—of traditional Andalusian wines, and especially the wonderful biologically aged wines, among wine lovers worldwide." -Equipo Navazos
