"Blend of 85% Gamay (fruit, roundness), 15% Cabernet Franc (frame, structure).
Cold maceration for 4 days then fermentation around 20°C to extract the fruit with daily pumping over until mid-fermentation. One-week post-fermentation maceration with micro-oxygenation during aging to round out the wines.
With a pretty ruby color, Java Rouge des Grandes Espérances develops very fruity aromas of very ripe red fruits (strawberry, raspberry, etc.) which on the palate combine with slightly spicy notes.
