Domaine 47°N 3°E - Chablis Premier Cru 'Cote de Savant' 2023 750ml
"Among the wines of Domaine 47°N 3°E, the Chablis Premier Cru Côte de Savant bears the strongest imprint of my style. As Côte de Savant is a specific vineyard site within the Beauroy appellation, I select vines from a particular vineyard plot to produce this cuvée. The grapes are harvested by hand and rigorously sorted to retain only the healthiest and ripest fruit. The motto at the sorting table is: "Imagine the wine press is your stomach; keep the grapes you want to eat and discard the rest."
Following natural settling at low temperature for 36 hours, the clear juice is vinified in 500-liter Burgundy oak barrels, where natural alcoholic and malolactic fermentations take place. Aged for 12 months in these demi-muids, the wine is lightly filtered and then bottled.

"An airy width of aroma – the barrel present for sure but initially less intrusive vs the ‘Cairn’ – but more stable. In the mouth this vibrates with energy – cushioned by the barrel today. Broad – panoramic – finishing with slightly sweet barrel notes to the end. It has a delicious flavour energy and is certainly excellent – potentially a great one with time." - Burgundy Report
