"Saperavi grown in the Ferrosol soils of the Corsini farm in King Valley. Early and late season rains barely affected this hardy parcel (thankfully!) and we were able to pick at full physiological ripeness - in late April. Fifteen day maceration (destemmed) then raised in tank for fourteen months. A nominal SO2 addition when first moved off lees, otherwise nothing added." -Dirty Black Denim
