Cornella - Ultraviolet Black IPA

"Ultraviolet is the first half of our Unseen Spectrum dual release, both brewed with SH-45, a new thiol-unlocking yeast that targets aroma compounds bound deep in the grain and hops. Most of these compounds are chemically locked at the start of fermentation; SH-45 cleaves them free as tropical thiols you'd never get from these ingredients otherwise.

We mash-hopped with Columbus to plant bound thiol precursors early in the brew, giving SH-45 more raw material to release during fermentation. From there we layered Cascade and Vista in the whirlpool and dry hop, capped off with a concentrated dose of Clayton Hops Cascade Amplifier hop oil. The pay-off is bright sweet papaya, ripe melon and citrus against a smooth, genuinely black malt base.
