"Infrared is the second half of our Unseen Spectrum dual release, both brewed with SH-45, a new thiol-unlocking yeast that targets aroma compounds bound deep in the grain and hops. Most of these compounds are chemically locked at the start of fermentation; SH-45 cleaves them free as tropical thiols you'd never get from these ingredients otherwise.

To let those notes breathe, we leaned on dark Belgian candi syrup — fermentable, characterful, but dry — instead of the usual red-ale malt stack. That gave us the canvas for a blazing canopy of Amarillo and Audacia, backed up with Citra and Chinook. Orange marmalade, sweet pine, red berry. Resinous, crisp, and a long way from sweet.
