"For this small batch of Nocturne, we blended three different millésimes of this once-in-a-year brew. Around the coldest of nights, we then brew a dark pure malt beer that we ferment and mature on our oak lambik barrels. While blending a very old portion - in this case both six-year old (46%) and three-year old versions (44%) - with a fresh brew, we make it our version of a Vlaams Oud-Bruin. The weighted average age of this blend is more than 51 months." - 3 Fonteinen
