3 Fonteinen Raspberry is obtained by maceration of hand-picked raspberries on young traditional lambic, at a ratio of one kilo of raspberries per liter of traditional lambic. The fruit lambic is then assembled with young lambic and everything is bottled, and the fermentation continues in the bottle. The result is a distinctly fruity raspberry lambic beer, with an intense forest fruit bouquet and with evolution in the glass.

For this specific Raspberry we used summer raspberries. We kept the maceration short to allow the fruitiness, fruit acids and soft lambics to blend beautifully. The
