This blend consists of lambics of +/- 2 years old and are selected for their specific aroma. --- <h3>Cantillon - Cuvee Saint Gilloise Lambic 2023</h3> Style / Variety: Lambic Region: Anderlecht, Belgium ABV: 5.5% Bottled: 23 February 2023 Two-year-old lambic in which fresh HallertauMittelfrüh hops have been soaked. A perfect balance is struck between the lambic’s natural acidity and the Hallertau hops’ refined bitterness. In order to preserve the subtlety of the hops, the lambics selected for Cuvée Saint-Gilloise are elegant and refined such that the balance between acidity and bitterness is not disturbed. Since there is no blending with young lambic as for gueuze, and no addition of fructose as for fruit beers, secondary fermentation of Cuvée Saint-Gilloise in the bottle is brought about by adding liquid sucrose. This unique blend of different vintages is completely organic, pure, unfiltered and not pasteurised. --- <h3>Cantillon - Sang Bleu 2023</h3> Style / Variety: Fruited Lambic Region: Anderlecht, Belgium ABV: 6.0% Bottled: 13 February 2023 Lambic blend with blue honeysuckle, or haskap, berries. For the past two years, we’ve been making a fruited blend with Camerise berries in small quantities. These berries are slightly sweet with a beautiful acidity. We didn’t have to look very far for a its new name... a blue fruit that makes a blood-red beer: Sang Bleu. This blend matured on average 10 months in red wine barrels. --- <h3>Side Project - Biere Blanche Blend 4</h3> Style / Variety: Barrel Aged Belgian Style Wheat Beer Region: Missouri, USA ABV: 5.0% Bière Blanche is inspired by the witbiers of Belgium brewed with large amounts of wheat and spiced with coriander and orange peel. The soft palate and low bitterness of this witbier is perfect for aging in Chardonnay barrels with our local microflora, which added a ripe, citrus acidity to this vibrant beer. This refreshing witbier aged in wine barrels for more than a year before it was naturally conditioned in this bottle. --- <h3>Cantillon - Grand Cru Bruocsella 2019/2020</h3> Style / Variety: Gueuze Lambic Region: Anderlecht, Belgium ABV: 5.0% Bottled: 22 May 2023 Lambic Grand Cru Bruocsella Cantillon is a Lambic matured for three years in oak barrels and selected for its exceptional qualities of color, bouquet and aromas. From its golden yellow, luminous, slightly amber hue, its aroma of mixed apple and honey, the Grand Cru Bruocsella draws its main powers of seduction. Its taste qualities are due to its raw character, its almost imperceptible sweet acidity. Its long shelf life gives its bouquet fine nuances of toast which, according to some, resembles the white Burgundian grape variety "Chardonnay". This aristocratic beer is to our national beverage what Mouton-Rothschild, Petrus or Romanée-Conti represent to wines. Like these jewels of taste, Lambic Grand Cru Bruocsella is not drunk but savored when tasting and can accompany the most refined dishes. It enhances all steamed dishes with its subtleties, discreetly highlights the taste of fish and shellfish, and supports the most fragrant charcuterie with its robustness. It is fabulous as a counterpoint to sauerkraut. The Grand Cru Bruocsella Cantillon is a very long-lasting beer with an evolving taste. We recommend tasting this old Lambic in wine glasses (tasting type). Since there is no secondary fermentation in the bottle, Bruocsella is a flat, non-sparkling beer. The beer will evolve over time. Store are serve at cellar temperature (12-15°C). This blend matured on average 10 months in red wine barrels. --- <h3>Side Project - Le Saisonnier Dry Hopped</h3> Style / Variety: Foedre Aged Farmhouse Saison Region: Missouri, USA ABV: 4.0% Dry-hopped Le Saisonnier was hopped with New Zealand Rakau and is named after the seasonal workers for which the first, old-world Saisons were originally made. We brewed this table beer with European malts and aged it in a Missouri Oak Foedre for 6 months with a blend of Missouri microflora to create a delicate, yet expressive experience from this naturally conditioned beer. --- <h3>Cantillon - Kriek 100% Lambic Bio 2023</h3> Style / Variety: Kriek Lambic Region: Anderlecht, Belgium ABV: 6.0% Bottled: 8 May 2022 Blend of lambics and sour cherries - 200 g of cherries per litre of beer. Beer with a slightly acidic taste of red fruit complemented with subtle almond flavours. Kriek brings out its maximum “fruitiness” when drunk young. With age the lambic will take the upper hand, but this is at the expense of the fruit component. Our sour cherries, which are certified organic, come from Turkey. The fruit is blended with lambic that is on average 20 months old, the proportion being 200 g of fruit per litre of beer. Since sour cherries have a very pronounced taste it is necessary to select a lambic that has enough character so that it will be a good match for the fruit. After soaking for two to three months, the lambic has extracted the full colours, fragrances and flavours of the sour cherries. At that point it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle. We only use fresh fruit and, as is the case for wine, Cantillon beers can be referred to in terms of vintages. For this 2020 second edition, NJ rhubarb was macerated for two months in a single puncheon of 2.5-year-old beer. --- <h3>Block 15 - Ripple</h3> Style / Variety: Wild Ale with Honey Region: Oregon, USA ABV: 8.0% An afternoon tasting through our wild cellars produced this 10 year anniversary blend. It reflects a decade of hard work and experimentation. Featuring a variety of techniques that we've learned through the years - from the spontaneous fermentation program that showcases our unique house character. Our latest is with Montmorency and Balaton cherries! We added equal parts of each variety to Grisette-style beer at a ratio of about 1.25 pounds per gallon. Our goal was to make a very drinkable beer, low in acidity, with present but not overwhelming fruit character. With an emphasis on balance and drinkability, we primary-fermented the Grisette in stainless steel for a few weeks, then added the cherries for secondary fermentation in stainless as well. Our intent is for our fruited-Grisettes to be enjoyed fresh, while the fruit character is still vibrant and the fermentation character is "clean". We kettle hopped it with Organic Golding from The Oregon Hophouse for about 18 IBUs. Around this mark, we find the acidity from fermentation and the fruit creates a harmonious, well-integrated soft, drinkable tanginess. After primary fermentation in stainless steel with our mixed culture, we re-fermented with fresh/frozen mangoes at a ratio of two pounds per gallon. While this sounds like a lot of fruit (and it is), the result is a really dry, drinkable, quenching fruit beer, which again has been one of our go-to's lately. --- <h3>Cantillon - Rose de Gambrinus 2023</h3> Style / Variety: Kriek Lambic Region: Anderlecht, Belgium ABV: 5.0% Bottled: 13 June 2023 Blend of lambics and raspberries - 200 g of raspberries per litre of beer. Beer with a slightly acidic, fruity and fragrant taste. Just like kriek, the “fruitiness” of Rosé de Gambrinus is at its best when the beer is young. With age the lambic will take the upper hand, but this is at the expense of the fruit component. The raspberries are from Serbia and the fruit is blended with lambic that is on average 20 months old, the proportion being 200 g of fruit per litre of beer. Since raspberries are delicate it is necessary to select a lambic that is both mellow and subtle so that it will be a good match for the fruit. After soaking for two to three months, the lambic has extracted the full colours, fragrances and flavours of the raspberries. At that point it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle. We only use fresh fruit and, as is the case for wine, Cantillon beers can be referred to in terms of vintages.
