Malt Donkey is completely rewriting the rules of beer. Straight out of South Australia, this nano-malthouse and brewery is treating grain exactly like the wine world treats grapes. They are obsessed with terroir, growing single-paddock barley trials across 25 different soil types (including grapevines in the Barossa) just to prove how a specific patch of dirt changes the flavour in your glass.
Brewed by Tom Whitehouse (ex-Balter & Pirate Life), their flagship "Fine Ales" skip traditional styles entirely. These are massive 8% ABV showstoppers presented in vintage-dated, corked champagne bottles. The wild part? You can try different versions of the exact same beer recipe where the only difference is the paddock the grain was harvested from, moving from savory complexity to bright fruitiness.
