Beer with a slightly acidic, fruity and fragrant taste. Just like kriek, the “fruitiness” of Rosé de Gambrinus is at its best when the beer is young. With age the lambic will take the upper hand, but this is at the expense of the fruit component. The raspberries are from Serbia and the fruit is blended with lambic that is on average 20 months old, the proportion being 200 g of fruit per litre of beer. Since raspberries are delicate it is necessary to select a lambic that is both mellow and subtle so that it will be a good match for the fruit. After soaking for two to three months, the lambic has extracted the full colours, fragrances and flavours of the raspberries. At that point it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle. We only use fresh fruit and, as is the case for wine, Cantillon beers can be referred to in terms of vintages. All the beers are from the same brewing season and mature in barrels for three years. Beer with a highly complex structure that has a wine-like and somewhat oxidised taste, the slightly acidic structures mingling with more mellow aspects. Powerful yet elegant, Bruocsella can be considered the missing link between the worlds of wine and beer. Since there is no secondary fermentation in the bottle Bruocsella is a flat, non-sparkling beer. The Lambic Grand Cru Bruocsella Cantillon is a lambic which has matured for three years in oakwood barrels and has been selected for its exceptional colour, taste and flavour. Its light, slightly amber, yellow-gold colour and its aroma, a mixture of apples and honey, make the Grand Cru Bruocsella a very seductive beer. Its taste derives from its dry character and its slight and discreet acidity. When kept for a long time, its bouquet gets the fine flavour of roasted bread which, according to some, relates it to the white Burgundy "Chardonnay". This aristocratic beer is to our national beer patrimony what Mouton-Rotschild, Petrus or Romanée-Conti are to the wines. Just like these top quality wines, the Lambic Grand Cru Bruocsella is not drunk but savoured and it can be served with the finest dishes. Its subtle taste enhances the savour of stewed dishes, underlines discreetly the taste of fish and crustaceans and constitutes a strong support for the taste of fine meat. Combined with sauerkraut, it tastes to full advantage. The taste of the Grand Cru Bruocsella Cantillon will change in course of time and the beer can be kept for years. Viognier grapes make Vigneronne a delicate and very refreshing beer that, due to the fructose, is slightly less acidic than other Cantillon beers. In spite of its success, the Vigneronne represents less than 5% of the total production of the Cantillon brewery. In order to obtain grapes which are as mature as possible, we buy them at the end of the season. Every year, 1000 kilos of white French grapes are delivered at the Cantillon brewery in the beginning of October. It is difficult to produce more Vigneronne even though the demand exists. All the grapes are picked from the bunch by hand and we don’t have much time, since the new brewing season starts at the end of October. The beers are not blended before the bottling.
