A collab conjured up by the wild minds of Carwyn Cellars & Bright Brewery. We sourced 6 different barrels from the finest of haunted French chateaus and other faraway lands and put them to work containing a monster imperial stout. We're no strangers to biiig barrel-aged collab releases, so trust us when we say we're excited for (and maybe a little scared of) what has emerged from these delicious dark depths.
2023 Releases
The first 'Le Monstres Du Chateau' (The Castle Monsters) have been disturbed from their cosy barrel slumber and are almost ready to be unleashed on your unsuspecting souls! The best part? This is just the FIRST TWO releases. The next time a brewer gets a little too close to one of these barrels and has a vivid vision of the perfect blend, we'll be releasing more madness.
Bright x Carwyn Cellars 'Le Monstres du Chateau #1' Chartreuse Barrel Aged Imperial Stout
Release #1 is aged in Chartreuse barrels, with the distinct flavour of this infamous green liqueur showcasing overtones of aniseed and a light herbal finish. They called us insane when we chose this monster of a barrel, but enjoy what we believe to be the first Chartreuse barrel aged stout in Australian beer history.
Aroma: Minty fresh, aniseed for days, 'Smells like Chartreuse without the regret'
Taste: Chocolate liquorice bullets, toasted, dark espresso, lingering herbaceous dry finish.
Bright x Carwyn Cellars 'Le Monstres du Chateau #2' Rum & Banana Brandy Barrel Aged Imperial Stout
Release #2 of our series is a Rum and Banana Brandy blend designed to showcase sweeter notes with candied banana, burnt caramel and hints of coconut. An imperial stout so delicious it is sure to raise even the dead from their slumber.
Aroma: Fresh banana, toasty oak, dark muscovado.
Taste: Dark maple syrup, espresso, dark chocolate, luscious body, low roast with lingering bitterness.

2024 Releases
The monsters are back! We are thrilled to invite you to the launch of the next double release of Le Monstres Du Chateau - #3 (Madeira) & #4 (Caribbean Rum) Imperial Stouts! You may still be haunted by the first two barrel aged releases - '#1 Chartreuse' & '#2 Rum & Banana Brandy'. Well, say your prayers, two more monsters barrel aged imperial stouts have been unleashed!
Bright x Carwyn Cellars 'Le Monstres du Chateau #3' Madeira Barrel Aged Imperial Stout
Release #3 was aged in Madeira barrels which lent the distinctive flavour of this rare island wine to the beer. A chocolate plum aroma paves the way for a candied fruit and caramel flavour with a dark bitter chocolate finish that is smooth, rich and velvety.
Roasty stout with notes of Blackberries, Chocolate syrup, Tarte Tatin. The Madeira comes through as dark dried fruits like prunes and raisin with molasses. Silky body and semisweet boozy finish for a complex and delicious beer.

Release #4 is aged in Caribbean rum barrels, showcasing the classic Caribbean flavour of coconut with subtle tropical rum-soaked fruit notes and sweetness. Much like the legendary Chupacabra who adorns Release #4, we invite you to sink your fangs in and enjoy this showcase of barrel aging excellence.
Deep notes of chocolate, rich dark anejo Rum & Italian aperitivo with light caramelized almonds and earthy notes in the background. Fruity esters like roast pineapple & raspberry jam. Finishes dry with lingering roasty bitterness.
