Six Acres - Silvan Block Cabernet Sauvignon 2019 750ml

"The grapes for this wine were sourced from our pioneer Cab Sauv planted in 1999.

Now reaching optimal maturity, the vines are producing some stunning flavours and complexity which once made Yarra Cab king. We feel that we can now produce a wine deserving of the reserve grade.

Handpicked 2 tonne were split into 3 fermenters, each with different treatments. One was 100% destemmed (accentuating fruit forwardness), one was 100% crushed (bringing grape tannin for structure) and one had stems added to the base of the fermenter (to give the wine an elegant tannin structure). The wines we then blended together post pressing for aged in french oak barriques (10% new) for 18 months.

Natural alcoholic and malic fermentation.

Unfined & unfiltered as all Six Acres wines are.

Hand bottled under DIAM under a wax seal." - Six Acres
