A blend of one and two-year French oak barrel-aged spontaneously fermented beer inoculated with local Hood River microflora in the koelschip on our farm. Made with Northwest-grown malted barley, raw wheat, and aged whole hops, taking inspiration from traditional Belgian beers from the Senne Valley. Tart, citrus, and funky from Brettanomyces yeast, this bottle-conditioned unpasteurized beer has aged quite well during its time in the bottle and is tasting delicious. This beer is bottle-conditioned, unfiltered, and unpasteurized, and can be aged gracefully for years

This liberation begins its journey as DBA then continues on through a "chrysalis" process involving 85% French and 15% American oak barrels and our proprietary collection of microflora. To blend, we selected beer matured 8 to 36 months in barrels, creating a synergistic beer. Immediately, toasted oak and lemon pith swirl on the nose and palate, followed by an amazing harmony of vanilla, coconut, Earl Grey tea and spice. The finish is crisp, with a mouth-watering acidity and chewy tannins. A santé!
