"A blend of one and two-year French oak barrel-aged spontaneously fermented beer inoculated with local Hood River microflora in the koelschip on our farm. Made with Northwest-grown malted barley, raw wheat, and aged whole hops, taking inspiration from traditional Belgian beers from the Senne Valley. Tart, citrus, and funky from Brettanomyces yeast, this bottle-conditioned unpasteurized beer has aged quite well during its time in the bottle and is tasting delicious. This beer is bottle-conditioned, unfiltered, and unpasteurized, and can be aged gracefully for years." - Logsdon
