Here at Carwyn Cellars we have a passion for traditional styles of beer, and nothing says "traditional" more than the well-known Belgian style: Saison. ⁠We’ve dreamed of creating the ultimate ode to our the beloved Belgian classic, Saison Dupont. So who better to team up with than our fellow Northsider mates at Future Mountain, and create a new-world classic with!⁠

About Future Mountain.

Future Mountain’s passion lies in creating Farmhouse ales, sour beers and Belgian-inspired Saisons, so it was a no-brainer to pair up with them for this collab! Focusing on yeast and fermentation, Future Mountain uses blends of commercially available Saison yeast strands as well as cultivating their own from bottle dregs. This brew uses a new house culture they’re playing with to achieve a higher ABV Saison, for which primary fermentation took place in their open fermenter and was then transferred into a tank for secondary fermentation.⁠

The addition of old-world classic hop varieties, and the use of a diverse malt bill including triticale (a blend of rye & wheat) make for a complex and finessed beverage. Whether you want a casual drink in the sun or are looking for something refined to take to a dinner, this Saison has the versatility and flavour for all occasions.⁠

So, after months of planning, the unique approach, and our northside locations in mind, we are excited to release Saison du North! Enjoy this wonderfully refreshing farmhouse ale with notes of lemon rind and light honey, that finishes dry with a mild lingering bitterness.

About the Style: Saison

This farmhouse style of beer historically comes from the Wallonia region of southern Belgium. It was a refreshing beer made with locally available ingredients, and usually made for the seasonal workers at the farms, hence the refreshing and nourishing characteristics of this ale.
