The Rosé de Gambrinus Cantillon is obtained by macerating fresh raspberries in two years old Lambic. Its complex aromas and sour taste make this unique beer an excellent thirst-quencher.
Beer with a slightly acidic, fruity and fragrant taste. Just like kriek, the “fruitiness” of Rosé de Gambrinus is at its best when the beer is young. With age the lambic will take the upper hand, but this is at the expense of the fruit component.
The raspberries are from Serbia and the fruit is blended with lambic that is on average 20 months old, the proportion being 200 g of fruit per litre of beer. Since raspberries are delicate it is necessary to select a lambic that is both mellow and subtle so that it will be a good match for the fruit. After soaking for two to three months, the lambic has extracted the full colours, fragrances and flavours of the raspberries. At that point it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle.

Soured Pumpkin is the 1st showing of this pretty amazing wild beer. A blend of three years brews (16, 17 & 18), it's half malted barley, half whole, pumpkins grown by Johnny Windsor just down the road from us.
Blood rushing, on stage, Two Metre Tall loudly proclaimed "It's only grapes!" - a farmer referring to the dominance of wine as the universal beverage match for dining - "we could do that with pumpkins!". Gauntlet thrown down, challenge accepted. And here it is! A pumpkin ale, half barley, half whole pumpkins. A wild fermented blend of many different 'vintages'. And we have to say it... "It's particularly good with food!
