The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.</em></p> <p><em>The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.</em></p> <p><em>After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter. </em></p> <p><em>Iris is brewed only once every season and all the beers come from the same brewing. This is why the beer is dated. The second fermentation is obtained by adding liquor. Although it is a spontaneous fermentation beer, the Iris is very different from the Lambic. Our traditional recipe calls for an extended boil which caramelises rustic pale grains in order to develop a copper colour and malt sweetness. Light levels of hopping balance with the toasty characters in an extended cooler fermentation with our house culture. Following fermentation, we rack Amber into French oak barrels to further develop a smooth palate and express funky, tart characteristics from our indigenous yeast. We select and blend well evolved barrels for a desired malt forward with subtle acidic character. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution in the bottle result in a distinctively complex beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions, etc. This cuvée, like all of our lambic, is 100% natural, authentic, spontaneously fermented, and crafted with steadfast adherence to tradition, like Armand and Gaston Debelder have always done it. This geuze has fermented in the bottle and will continue to develop its tastes and aromas over its long life when properly cellared. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The oldest portion of lambic was brewed on the 28th of November 2014. While blending, we added spring honey from our own bee(hive)s.</em></p> <p><em>3 Fonteinen Oude Geuze Cuvée Armand &amp; Gaston is a blend of one-, two-, and three-year old traditional lambics, all brewed at Brouwerij 3 Fonteinen. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution in the bottle result in a distinctively complex beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions, etc. This cuvée, like all of our lambic, is 100% natural, authentic, spontaneously fermented, and crafted with steadfast adherence to tradition, like Armand and Gaston Debelder have always done it. Blend #7 is a blend of two barrels, 1728 and 1603. A five month old barrel, the beer in 1728 was put to barrel in March 2017. 1603 was filled with our fifth batch of Amber on 16 June and aged there until blending.</em></p> <p><em>The base beer is brewed entirely with New South Wales cereals: Single Origin (S.O.) Moree, NSW grown Gairdner ale malt and North Star, NSW grown Spitfire S.O. raw wheat thanks to Provenance Malt, as well as Riverina grown Janz S.O. raw wheat, Binya, NSW grown S.O. LaTrobe vienna malt and Riverina grown chocolate malt from Voyager Craft Malt. It is made with filtered Sydney water and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. It was bottled on August 30 2017 and naturally conditioned through refermentation for 9 weeks. At bottling it was 6.0% ABV, 15 IBU and 1.8°P (FG= 1.006 SG). Like all our beers, Amber Blend #6 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).</em></p> <p><em>The aromas from this blend are reminiscent of seaweed and crushed oyster shell with smoky, forest undergrowth undertones. The final aromas are of cocoa, grainy and toast.</em></p> <p><em>Its palate is exciting with big sweet red fruit flavours of raspberry and sour cherry. Continuing on from the aroma, it had flavours of freshly toasted grain and cocoa from the freshly roasted chocolate malt. This blend finished with a clean hazelnut finish.</em></p> <p><em>Overall, this blend is a little broader than the two previous. These bottles are then stored in our cellars for at least five months so that the raspberry lambic can develop into a beautiful, traditional, and refined Framboos. With an abundant forest fruit nose as it warms in the glass, 3 Fonteinen Framboos will age perfectly but may lose some of the vibrant colours and forest fruit aromas. Just like kriek, the “fruitiness” of Rosé de Gambrinus is at its best when the beer is young. With age the lambic will take the upper hand, but this is at the expense of the fruit component.</em></p> <p><em>The raspberries are from Serbia and the fruit is blended with lambic that is on average 20 months old, the proportion being 200 g of fruit per litre of beer. Since raspberries are delicate it is necessary to select a lambic that is both mellow and subtle so that it will be a good match for the fruit. Once mature, we allowed it to re-ferment on Illinois-grown Quince (sourced by LC member Will Bresnahan!) from the 2020 and 2021 harvests. While blending Vintage 2019 last year, we revisited all of previous blends and Blend #1 always had, and still has, this slight sense of air, fluff, and delicacy which had gracefully aged and developed. Even with the careful selection of our best barrels over the years, Blend #1 always held its own special place when enjoyed at the same time as the others during a vertical tasting.
