Hopped in the boil w\/ East Kent Goldings (UK) and Tettnang (DE) to 18 IBU.\u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eThis beer was boiled for 3 hours as was done traditionally to achieve kettle caramelisation. This imparts colour and flavour which is only achieved through this process.\u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003ePrimary fermentation occurred in barriques for 11 months with a blend of lager, saison yeast, brett. lambicus \u0026amp; lactobacillus.
