Its warm days and cool marine layer-fed evenings allow for a cornucopia of fruits and vegetables to be grown in its rich soil. One of Santa Maria’s crown jewels is locally grown raspberries. We jumped at the opportunity to ferment fresh local raspberries with one of our Barrelworks creations. Behold Bretta Rosé! A low-alcohol Berliner Weisse style ale, acidified and matured in French oak puncheons for 6 months, is the foundation for this gem. Add 1000 lbs. of fresh raspberries, allow a secondary wild fermentation for 4 more months and voila (!), we have a crisp effervescent concoction, bursting with raspberry perfume and flavor, a rosé color, bracing acidity, and a clean and refreshing finish.' - FW x1 '<a href="https://carwyncellars.com.au/products/firestone-walker-gin-rickey-2020-355ml">Gin Rickey 2020</a>' Blonde Barley Wine aged in Gin Barrels with Lime & Spices (11.3%) 355ml 'This is highly carbonated to mimic the original Gin Rickey cocktail, which was hugely popular during prohibition. Cocktail-inspired beers have taken our tastebuds by storm at the brewery. We draw inspiration from all directions and are thrilled to be able to present you with Gin-Rickey.' - FW x1 'Napa Saison 2019' Red Wine Barrel Aged Saison (7.3%) 375ml 'We took a classic Saison and aged it in wine barrels for eight months. The combination of rustic flavors mingle with flavors from the wine. Flavors of lemon zest and pepper evolve into white wine with subtle French oak aromatics.' - FW x1 '<a href="https://carwyncellars.com.au/products/firestone-walker-undercurrants-batch-1-375ml">UnderCurrants 2018</a>' Wild Red with Blackcurrants (6.3%) 375ml 'In 2018 we challenged ourselves to using an array of fruit new to our palates and practices. When offered a high quality, freshly picked Black Currant sample, we couldn't resist. We present to you a metamorphosis for your sense. Using 12-36 month aged Agrestic Ale as a base, to which we add1.5lbs/gal Black Currants, the beer undergoes the final maturation in our French Oak "Fruiders" for an additional four months. A convergence of supple tanning and deep purple pigments, gooseberry jam, a month-watering acidity and earthy leather elicit notes of a beer having vinous roots. A new variant to one Barrelworks pioneers is born. Santé!' - FW x1 '<a href="https://carwyncellars.com.au/products/firestone-walker-bretta-weisse-batch-3-375ml">Bretta Weisse 2017</a>' Foeder Aged Berliner Weisse (4.7%) 375ml Imagine yourself in Berlin’s Tiergarten enjoying this refreshing Berliner Weisse inspired beer on a warm summer’s day. Bretta Weisse honors the traditional beverage of the great Prussian capital, Berlin. Fredrick-the-Great was trained to brew it, and Napoleon’s troops called it “The champagne of the North”. Firm estery notes of stone and tropical fruit lead to Funky, yeasty, citrus aromas. Soft cereal and Oak flavors are enveloped by a firm acidity and tartness. The finish is dry and crisp; a thoroughly enjoyable beverage. At 4.9% ABV, one could imagine enjoying several Bretta Weisse’s in the Tiergarten, or anywhere else. This Berliner Weisse inspired Wheat beer was aged in 1700 gal French Oak horizontal foeders for 8 months. - FW x1 '<a href="https://carwyncellars.com.au/products/firestone-walker-sour-opal-2017">Sour Opal 2017</a>' Blended Wild Ale (5.9%) 375ml 'We’ve patiently waited for two years to offer you this exquisite ale! Sour Opal retraces its roots to the lambic cellars of the town of Brussels and the Senne River valley, in Belgium. This American “Gueuze” represents a spectrum of flavors from a traditional barrel aged sour ale, complete with aromas of aged cheese and a distinct earthy mustiness that can only be found in a well cellared barrel aged sour. The complexity and balanced flavors of Sour Opal can be attributed first to the crisp assertive tannic acidity of the Viognier barrels. Oak-derived flavors and aromas mingle with guava, passion fruit, pineapple and tart cherry notes.
