CORTA y RASPA Palomino do Pasto de Parcela ‘Viña La Atalaya’ 2018, Pago Atalaya 750ml
Four producers in the Marco de Jerez region of Spain have teamed up together to create a very cool new label.
Each wine uses the same variety, Palomino, is spontaneously fermented, minimal treatment and aged in barrels for 12 months without ullage and not under flor. So what sets these wines apart from one another? The Mayeto (the local word for a small producer) parcel from which they originate.
Vina La Atalaya comes from the Pago Atalaya parcel from Jose Manuel Harana Yuste, a 5th generation mayeto who's wine, thanks to the warm inland winds, finds structure and freshness.
Steely and wheaty (slightly green like the smell of the head of an almost ripe wheat flower just before harvest), a gentle wash of lemon, a touch of wirey herb. Chalky white tannin gives delicate structure, with pebble-in-riverbed flow, a touch of spice and a trickle release. The structure is great … it’s just a line organising dancing, floating, rotating fruit which arabesques around it to the finish.
