The third installment is Hazy DIPA! ! !</em></p> <p><em>The brewers traveled between Tokyo, Mejiro and Shizuoka, Mochimune to create the long-awaited cup. A common feature is the use of “CRYO” hops during dry hopping in the early stages of fermentation. Furthermore, this WCB-released beer uses the Inkhorn crew's favorite hop, "Nectaron," and follows their lead in malt distribution by choosing a generous amount of Wheat. (The Inkhorn release features that hop that WCB loves...🤭)</em></p> <p><em>How about the taste of new discoveries that are created by taking advantage of each other's knowledge of hops and incorporating each other's sensibilities and worldviews?</em></p> <p><em>A tropical aroma reminiscent of papaya, mango, and pineapple, combined with the impression of peach, nectarine, and cantaloupe, making it super tropical! ! ! Excellent balance with just the right amount of sweetness and a gentle bitterness.</em></p> <p><em>During preparation at WCB, I happened to find a single bird of paradise flower in Mochimune. The right haze man. Verdant yeast might be the one bringing out the bubblegum bits, we aren't quite sure. Nemesis’ minions kicking the seats, The Traveler taking up all of the luggage shelf space (Group 5 what); the constant need for full body massage therapy after every trip (not a fan of the footrests kthx). So rather than use all of that brilliant motivation and mileage to do the sensible thing and just upgrade, they just decided to build a freaking PORTAL. Forget jetsetting (as much as we actually do love that delicious status) - it’s time to just freaking disappear and reappear in different locations. Aaaand… not only did our Alchemist decidedly improve his travel game, but he also realized how much easier it would be to bring back various adjuncts and goodies from his favorite locales. All of this a long winded way of getting to The PORTAL being our NEW Sour Double IPA series. With lots of adjunct goodies. Iteration 1 is a kind of Oranje slash cocktail-inspired dessert offering, replete with tangerine puree and cacao nibs from our friends at Conche (we didn’t need the PORTAL to bring those nibs, but they did perhaps?). Sweet, burnt coffee/choco with orange, folks. That’s the beer. Sweet, slightly chemical and I think we can do a much better job with the chocolate element, but with low to no hop burn and lots of citrusy chocolate goodness, fans gonna like this first go. Since each beer can take years, it’s important to fill barrels consistently over that time so that a continuous stream of barrels can be produced without having to wait those initial years over again. Now that our first barrels are out the door, it seems that all the other barrels we added to this stream also started coming due. It was very difficult to decide on barrels for this blend as so many were excellent and ready for packaging. Essentially all of the barrels had a strong presence of whiskey (sometimes too much!), so we had to look past that to find the more nuanced flavors we were interested in.</em></p> <p><em>Of the four barrels we chose, two had an extremely strong presence of whiskey, while the other two were more subdued. These more subdued barrels, is where the notes of milk chocolate, coffee derive. After a number of blending combinations we landed on these four as a good balance of whiskey and other dessert-full flavors. </em></p> <p><em>The adjuncts for this beer were decided quickly. With a focus on creating something dessert- like, we felt the fat and oil from coconuts and pistachios was an excellent way to counteract any excessive heat. The most challenging factor with these two adjuncts is achieving enough flavor from them. That’s why we chose to roast each of them (and the coconuts twice). Without the toasting the oils from these nuts often can’t bind to the beer. Just like oil, this beer pours like a barrel of crude, sitting black and viscous in the glass. Don’t expect a delicate layer of foam to crown this beauty. However, expectations of coconut and pistachio are amply filled. The nose is packed with roasted coconuts and pistachios, leaving room for little else. The flavor, on the other hand, is bursting with complexity.
