After handpicking and destemming, we co-fermented the pinot gris and the pinot meunier for 12 days on skins. The pinot noir was also hand picked and destemmed, but fermented for only 10 days. The idea behind this is to maximise the extract out of the pinot gris, as we like this tannin to form the main structure of this wine. The red grapes are more for colour and palate weight; think of it as the pinot gris is the scaffolding and the red pinot's are all the pretty cladding. After pressing, everything is sent to old oak to finish primary and malolactic fermentation, and the wines stay in oak for almost a year on full solids. We add sulphur after malo, and another small addition prior to bottling - but there are no other additions or adjustments.
