<p><em>From our best selection of aged sour beer. Barrel fermented Belgian ale strains combine with nuanced spontaneous fermented barrels. Biodynamic berries, cherries and new oak were immersed in the blended ale at low temperature and allowed to free rise to near complete fermentation. The best components of all the ingredients should be audible but none should detract from the other, truly a masterpiece in harmony and all to celebrate this red letter day. <strong>- Dollar Bill Brewing</strong></em></p>

"body_html": "<p>Over 3 years ago we teamed up with long time Carwyn friend and member of the Melbourne craft beer scene Alister Robbie to put one of his tried and tested wild brown ale recipes into two old red wine barrels and forget about. Turns out that sometimes, being forgetful, pays off! The base beer is a kettle soured brown ale followed by a 100% Brett fermentation. After its stint in barrels the beer was fruited and bottled by Black Arts Beer. The base beer brings a Chinotto/ cola flavour that, with the added cherries and raspberries, becomes a riff on a cherry cola.</p>

<p><em>The weighted average age of this frambozenlambik upon bottling was more than twenty months, and final fruit intensity is 350 grams of raspberries per litre of Frambozenlambik.</em></p>

Unfiltered and unpasteurized, it is refermented in the bottle for a minimum period of 6 months. The lambics used are fermented and matured in oak barrels in our facilities. They are made from must brewed by the Boon, Lindemans, Girardin and Cantillon breweries.</em></p>

"body_html": "<p><em>"3 Fonteinen Framboos is the result of macerating hand-picked whole raspberries on young lambic for at least four months, in a proportion of one kilogram of fruit per litre of lambic. The raspberry lambic is then blended again with more young lambic to obtain a minimum intensity of 35% fruit, and is bottled immediately afterwards. These bottles are then stored in our cellars for at least five months so that the raspberry lambic can develop into a beautiful, traditional, and vibrant Framboos. With a abundant forest fruit nose as it warms in the glass, 3 Fonteinen Framboos will age perfectly but may lose some of the vibrant colours and forest fruit aromas.</em></p>
<p><em>This specific Framboos has a final fruit intensity of 310 grams of raspberries per litre of finished Framboos. The lambikken used come from three barrels and six different brews. We used a bit of our own lambik wort to start the fermentation in the bottle.</em></p>

<p><em>Made with A.P Bakery bread which we brewed with our dear friend Matt Storm of the legendary Seattle beer bar, The Masonry, and his brewery Fast Fashion. To make this ale, we mashed regenerative organic grains together with over 150 rescued loaves A.P had from the commissioning of their new Marrickville oven, clarified the wort through wheat straw and boiled with Fast Fashion's proprietary hop named 'Anchovy' (because it goes well with pizza) grown by Segal Hop Ranch in Yakima. Vegan friendly, no fish were harmed in the making of this beer.</em></p>

Wonderful lift and purity of aromas, an overwhelmingly fresh and complex hop driven nose. The palate shows the pine, grassiness and surprisingly raspberry characters. There’s a floral perfume that blooms in the periphery and fills the palate. It moves quickly, bursting with flavours before fading to a moreish finish. Clean bitterness and toasty grains to close. We used both young and two-year old lambikken, originating from nine different barrels and nine different brews. While blending Vintage 2019 last year, we revisited all of previous blends and Blend #1 always had, and still has, this slight sense of air, fluff, and delicacy which had gracefully aged and developed. Even with the careful selection of our best barrels over the years, Blend #1 always held its own special place when enjoyed at the same time as the others during a vertical tasting. Being that the grass is always greener, and since these subtleties hadn't been explored in a blend since the first, I wanted to take the steps to save Oude du Blé barrels which could be explored in early 2022 for this Vintage 2020 version of Tête de Cuvée. When Bryan Marin (Ravensworth Wines) realised his vines were smoke tainted from the 2020 bushfires, he concocted a plan 'B' with Topher Boehm (Wildflower Brewing & Blending). These beers are the marriage of Bryan's hand harvested, carbonic macerated, whole bunhc wine grapes with Topher's freshly fermented Gold Australian Wild Ale. Aged and macerated for eight months in Murrumbateman before travelling to the big smoke for bottling and maturation.</em></p>
