With a abundant forest fruit nose as it warms in the glass, 3 Fonteinen Framboos will age perfectly but may lose some of the vibrant colours and forest fruit aromas. This specific Framboos has a final fruit intensity of 310 grams of raspberries per litre of finished Framboos. The lambikken used come from three barrels and six different brews. We used a bit of our own lambik wort to start the fermentation in the bottle. These raspberries, hand-picked in the summer of 2019, macerated for more than three months on a single oak barrel. While macerating, we only used lambik originating from one brew and from one barrel, and we used another single lambik from one barrel for blending. While looking for old sherry barrels, we cannot get lucky all the time. While we will be sourcing barrels directly from bodegas to assure provenance and quality, we had a batch of Pedro Ximenez (PX) barrels that was on the peated side (albeit subdued). As a result, we decided not to use them for Zenne y Frontera, but to blend them with other (fruit) lambikken into geuze and fruit blends. This is the first of such blends to be released. Sour cherries were macerated partly on young peated lambik and partly on two-year old straight lambik in a stainless steel tank. We blended with young and three-year old (!) lambik. 55% of the blend is old lambik and the final fruit intensity is 567 grams of sour cherries per litre. We are talking about the wild variant; the sulky root-shot low-stemmed bush-alike tree that ragingly grows (in) any way it wants. The cherry tree that is hard to harvest, a tree one has to climb into to manually and selectively pick the sour cherries, spread over only a short period of ripeness. This fruit lambic is then blended again with more lambic to obtain a minimum intensity of 35% fruit. Hommage is a bodied raspberry lambic beer, with an intense deep red forest fruit bouquet. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. For this Hommage, we blended a co-maceration of raspberries and sour cherries – but we switched the fruit proportions – with a small batch of pure frambozenlambik. Consequently, this Hommage is somewhat out of the ordinary. The average weighted maceration time is 5,5 months and the final fruit intensity is 493 grams of whole fruits per litre of Hommage. The proportion of sour cherries is 54% vs. 46% of raspberries; the latter all sourced at Ferme Framboos. Finally, we also used a sizeable portion of two-year old lambik, brewed in the beginning of 2018. All lambikken originate from four different barrels and six different brews. For this specific Framboos we used summer raspberries. Which we macerated for three months. The one- and two-year old lambikken come from three barrels and three different brews. The final fruit intensity is 332 grams of raspberries per litre of Framboos. Some honey was added during bottling (2 grams per litre).
